Last week I gave the Maple and Pecan Layer cake a go from my new Hummingbird Bakery Cake Days book. It seemed to turn out pretty well with people at work requesting the recipe so I was happy. But I am a bit of a perfectionist.... one thing that annoyed me was I only had 2 8" sandwich tins and one 8.5" cake tin so the bottom layer of this 3 layer cake was a little too large.
Anyway today I am feeling inspired to bake after watching the Great British Bake Off.. if anyone hasn't seen it before it is sort of like a cross between the apprentice and master chef. If only they would say "You're Fired!"
